Khmer BBQ Aubergine with Pork (ឆាត្រប់)

Ingredients (គ្រឿងផ្សំ)

  • Aubergine (Eggplant) (ផ្លែត្រប់) x 2 (large)
  • Pork (សាច់ជ្រូក) – 200g
  • Garlic (ខ្ទឹម) – 3 cloves
  • Olive Oil or equivalent (ប្រេងអូលីវឬស្មើ) – 1 tbsp
  • Spring Onion (ខ្ទឹមម៉្យាងដើមតូច) – 2 sprigs (for garnish)
  • Salt (អំបិល) – pinch
  • Sugar (ស្ករ) – 2 tsp
  • MSG (optional) – pinch
  • Stock (ម្សៅសាច់មាន) – 1 tsp
  • Oyster Sauce (ងាវសមុទ្រទឹកជ្រលក់) – 1 tbsp

Today’s Barbeque Aubergine video is one of my favourites and everyone loves it, but its really so easy to make by yourself!

  1. Bar-b-que Aubergine over flame until charred a soft to touch
  2. Peel skin and discard, clean remaining flesh in water, and set aside
  3. Mince pork into small pieces
  4. Heat pan, add oil and heat, then add pork and fry til brown
  5. Add seasoning and cook 1 minute
  6. Add peeled aubergine, cook for a further 2-3 minutes until flavours have combined
  7. Remove from pan, and serve with spring onion pieces as garnish
