Khmer BBQ Aubergine with Pork (ឆាត្រប់)

Ingredients (គ្រឿងផ្សំ)
- Aubergine (Eggplant) (ផ្លែត្រប់) x 2 (large)
- Pork (សាច់ជ្រូក) – 200g
- Garlic (ខ្ទឹម) – 3 cloves
- Olive Oil or equivalent (ប្រេងអូលីវឬស្មើ) – 1 tbsp
- Spring Onion (ខ្ទឹមម៉្យាងដើមតូច) – 2 sprigs (for garnish)
- Salt (អំបិល) – pinch
- Sugar (ស្ករ) – 2 tsp
- MSG (optional) – pinch
- Stock (ម្សៅសាច់មាន) – 1 tsp
- Oyster Sauce (ងាវសមុទ្រទឹកជ្រលក់) – 1 tbsp
Today’s Barbeque Aubergine video is one of my favourites and everyone loves it, but its really so easy to make by yourself!
- Bar-b-que Aubergine over flame until charred a soft to touch
- Peel skin and discard, clean remaining flesh in water, and set aside
- Mince pork into small pieces
- Heat pan, add oil and heat, then add pork and fry til brown
- Add seasoning and cook 1 minute
- Add peeled aubergine, cook for a further 2-3 minutes until flavours have combined
- Remove from pan, and serve with spring onion pieces as garnish
