Khmer Fried Pumpkin (ល្ពៅឆា ខ្មែរ)

Ingredients (គ្រឿងផ្សំ)
- Pork (សាច់ជ្រូក) – 200g
- Pumpkin (ល្ពៅ) – 500g
- Eggs (ស៊ុត) – 4
- Garlic (ខ្ទឹម) x 3 cloves
- Spring Onion (ខ្ទឹមម៉្យាងដើមតូច) – 3 sprigs
- Salt (អំបិល) – pinch
- MSG (ស្រេចចិត្ត) – pinch
- Sugar (ស្ករ) – 2 tsp
- Stock (ម្សៅសាច់មាន) – 1 tsp
First up this week is an easy Khmer dish using Pumpkins.. The sellers at my market telling me nobody is buying these in Cambodia right now, so its a good time to go and buy them while they are cheap and support local produce!
- Peel and chop pumpkin
- Chop garlic and spring onion
- Heat pan and add oil then add spring onion
- Add pumpkin and season with salt sugar and stock
- Add a cup of water, oyster sauce
- Flatten pumpkin and add eggs
- Stir over heat until flavours combined
