This week another Cambodian Curry.. this one includes Coconut, Pineapple, Tamarind and other ingredients to give you a beautifully rich curry that has elements of sour, sweet, bitter & spice to hit every tastebud. Really showcases the best of local ingredients. Enjoy!

KHMER PORK, COCONUT & PINEAPPLE CURRY
ឆាខ្ទិះម្នាស់

Ingredients

Pork – 350g
Lemongrass- 3 sticks
Garlic x 4 cloves
Galangal – 50g
Turmeric – 50g
Eggplant – 300g
Red Chilli – 1
Red Onion (small) – 1
Pineapple – half
Shredded Coconut – 100g
Coconut Milk – 400g
Fish Sauce – 1 tbsp
Palm Sugar – 1 tbsp
Tamarind Water – 2 tbsp
Thai Sweet Basil – 100g
Salt – 1 tsp

សាច់ជ្រូក – 350g
ស្លឹកគ្រៃ – 3 ដំបង
ខ្ទឹមស x 3
រំដេង – 50g
រមៀត – 50g
ផ្លែត្រប់ – 300g
ម្ទេសក្រហម – 1
ខ្ទឹមក្រហម – 1
ផ្លែម្នាស់ – 0.5
សាច់ដូង – 100g
ក្រែមដូង – 400g
ទឹកត្រី – 1 tbsp
ស្ករត្នោត – 1 tbsp
ទឹកផ្លែអម្ពិល – 2 tbsp
ជីរនាងវង – 100g
អំបិល – 1 tsp
