Khmer Wing Bean Salad (សាឡាត់ប្រពាយ)

Ingredients (គ្រឿងផ្សំ)

  • Wing Bean (ប្រពាយ) – 200g
  • Chicken (សាច់មាន់) – 200g
  • Coconut Flesh (សាច់ដូង) – 100g
  • Peanuts (សណ្តែកដី) – 100g
  • Shallots (ខ្ទឹមក្រហម) x 2
  • Lime (ក្រូចឆ្មារ) – Big (ធំ) x 1
  • Lime (ក្រូចឆ្មារ) – Small x 2
  • Garlic (ខ្ទឹមស) x 3 cloves
  • Mint (ជីរអង្កាម) – to taste
  • Salt (អំបិល) – pinch
  • Sugar (ស្ករ) – 2 tsp
  • MSG (optional) – pinch
  • Stock (ម្សៅសាច់មាន) – 1 tsp

A delicious and healthy Khmer salad dish made with local ‘wing’ beans

  1. Chop the wing beans into small pieces then put aside into ice water
    Boil chicken until tender then cut into strips
  2. Grind peanuts until fine
  3. Add cold wing beans, chicken, and coconut to mixing bowl
  4. Add sauce made from garlic, lime, sugar and fish sauce (with 2 tbsp hot water)
  5. Add shallots, mint, peanuts, salt sugar and lime
  6. Mix everything together well and serve
