Another Khmer classic this week with my Char Kreung (or Chaa Kroeung) recipe. This is one of the most basic of Cambodian dishes, with the all important ‘Kreung’ paste stir fried with meat and vegetables. Easy and delicious, and you can substitute the meat and vegetables for any that you like (or try without meat at all!)
Khmer Chicken Char Kreung
ឆាគ្រឹង សាច់មាន់
Ingredients
Chicken – 250g
Lemongrass- 3 sticks
Holy Basil – 200g
Garlic x 3 cloves
Galangal – 50g
Turmeric – 50g
Eggplant – 300g
Red Chilli – 3
Oyster Sauce – 1 tbsp
Salt – pinch
Sugar – 2 tsp
Stock – 1 tsp
គ្រឿងផ្សំ
សាច់មាន់ – 250g
ស្លឹកគ្រៃ – 3 ដំបង
ម្រះព្រៅ – 200g
ខ្ទឹម x 3
រំដេង – 50g
រមៀត – 50g
ផ្លែត្រប់ – 300g
ម្ទេសក្រហម – 3
ងាវសមុទ្រទឹកជ្រលក់ – 1 tbsp
អំបិល – pinch
ស្ករ – 2 tsp
ម្សៅសាច់មាន – 1 tsp
